Tagliatelle rustiche con Pesce Spada e Topinambur



Quando il mare e la terra si incontrano nel piatto si possono creare suggestioni gustative stupefacenti, che coinvolgono sapore e consistenza. La ricetta che vi propongo oggi ha dentro entrambi, infatti ha come protagonisti due ingredienti: il pesce  spada, re del Mediterraneo, e il topinambur (Helianthus tuberosus), il piccolo fiore giallo autunnale che sboccia temerario ed incurante del freddo lungo i sentieri di campagna, sui costoni e nei fossati. Di questa pianta si utilizza il tubero, ricco di inulina, ferro, vitamina B, calcio, magnesio e, in piccolissima percentuale, anche di altri minerali. Ha il sapore simile al carciofo ma senza il retrogusto amaro e con un leggero sapore di noce.

Questo primo piatto vi stupirà per la semplicità della preparazione, per il gusto imprevedibile e per le diverse consistenze degli ingredienti.

Ingredienti (per 4 persone): 500 gr di pesce spada tagliato a cubetti; 200 gr. di topinambur; 1 spicchio d’aglio rosso; 1 cucchiaino di concentrato di pomodoro; 200 ml di acqua calda; 1 cucchiaino di amido di mais; prezzemolo e menta q.b.; sale e pepe; la scorza grattugiata di ½ limone; olio EVO; 400 gr di tagliatelle rustiche.

Procedimento: Pelate i topinambur e strofinateli con del limone in modo che non diventino neri e riduceteli in piccoli cubetti. Sciacquate velocemente il pesce spada sotto l’acqua corrente ed asciugatelo bene con della carta da cucina.

Lavate il limone e grattugiatene la buccia; allo stesso modo, nettate e sciacquate le erbette e tritatele.

Le operazioni sul fuoco saranno tutte molto rapide; vi consiglio dunque di preparare tutti gli ingredienti pronti per poter essere utilizzati.

Ponete su fiamma vivace una casseruola larga e bassa, alla fine ci dovrete mantecare la pasta, e fatevi leggermente soffriggere lo spicchio d’aglio tagliato a metà con l’olio. Aggiungete i cubetti di tubero, fateli insaporire mescolando velocemente. Dovranno rimanere croccanti.

Unitevi il pesce spada e fatelo rosolare bene da tutte le parti. A questo punto, aggiungete il concentrato di pomodoro (potete utilizzare anche quello del tubetto) e rimescolate in modo da farlo amalgamare. Unite l’acqua, abbassate la fiamma, e regolate di sale e pepe. Lasciate cuocere per circa 5 minuti.

Nel frattempo stemperate l’amido in mezzo bicchiere d’acqua e versatelo nella casseruola. Continuate a cuocere per altri 5 minuti, mescolando spesso. Alla fine il sugo dovrà avere una consistenza colloidale e non acquosa.

Cuocete la tagliatelle al dente. Scolatele lasciando sempre un po’ di acqua di cottura a parte. Mantecate la pasta con il condimento nella casseruola aggiungendo la scorza del limone e le erbette. Impiattate e prima di iniziare a mangiarle, godetevi il suo profumo di mare e di terra.

PS: In tempi di coronavirus, in questo momento di isolamento forzato, di dolore e preoccupazione, cucinare è un modo altro di donarsi, tenersi occupati e provare a contenere le nostre ansie.
Cucinare, infatti, per me non è un esercizio di stile, come vogliono farci credere in TV, non è una frivolezza da mettere in mostra; al contrario, sono convinta sia allo stesso tempo uno strumento di cultura popolare e di resilienza. Il cibo è sostanza della vita perché è ciò che materialmente la consente e cucinare è amore per gli altri.

"Anelletti al forno" a special oven-baked pasta timbale

It is a transversal dish that satisfies the palates of whom is rich and of whom is not it, of the intellectual and of the easy-minded, of men, women, old men and picciriddi (children, in Sicilian language).
The history "rù pasticciu ri sustanza" (timbale of substance) it goes once more connected to the Arabs, leaders and master in the pies. In the past it was realized recycling what it remained in the pantry, habit that somehow remains also today, considering that often we cafuddiamo (throw in) inside there what we have in the kitchen. A lot of people, for example, add to the hard-boiled eggs firm and charcuterie and cheeses of different type. Only a thing cannot miss "’u ragù c’a carni capuliata" (the ragoût with the minced meat), possibly enriched with the peas.
Another characteristic of the Sicilian oven-baked pasta is the quantity: it never does it for few people and, also if it remains, pan-fried in the evening or the day after it has "its because".
As for all the other recipes of the Sicilian cuisine also of this doesn't exist an unique version but so many of it how many the families are in Sicily.

I prefer it in "simple version" (just kidding).

Fresh noodles with cuttlefish’s ink


"Do you not have a boyfriend?"
"No", she answered.
"How is possible?", said him
"The men have terribly bored me."

Then he bent, he gave a kiss on her lips and he said: "Can I be your Valentine?
She looked at him with surprised air and she answered: "No, you cannot be him. You are too much young."

But, in that same moment she felt a worrisome scrunch in the wall inside which she had barricaded her emotions, months and months of job of construction that it was crushed in few second. She didn't want it, squashed on the crack a mortar anti-passion, and she went.
The mortar however it didn't have a good taking, fortunately for her.

In the ten days departed intensely together, that little boy come from far made her discover that what she wanted from the Love, her Idea of Love, was not illusion or romantic dream but it existed in the reality. Surely he was not the man of her life, the variables ages and distance didn't play in favor of them, but what happened reopened her a breach from which to see again the life colored to strong shades.
The awareness that the present has already passed made enjoy her every instant of that history. They almost never separated themselves and, knowing that soon this would have happened instead, she tried to satisfy him in everything. And an evening also taught him to make the pasta with the cuttlefish’s ink.

Bavette (pasta) with arugola pesto sauce

Arugula - Eruca sativa - or rocket is an herb fresh spicy taste that depopulated in the dishes of Italian restaurants and pizzerias since the fateful Eighties. This is so as to be inflated, and frankly, when the waiter shows me the dish chosen concluding with the famous words "on a bed of arugula," I take a sort of cold shiver and I feel my taste in solidarity with my neurons irritated.

The rocket, in truth, it tastes good and is very agreeable in salads or enjoyed some of the natural deep in a simple vinaigrette or, as I have been able to do thanks to my friend Matthew Grunewald, in an exquisite Japanese sesame sauce. But it is also great cooked, boiled and sauté with garlic, oil and chilli or reduced in pesto order to flavor a good plate of pasta.

And then, when my dear friend Angela, called me saying "I've got some fresh arugula from the garden of my brother and I have you prepared a bag. Do you want it? "My neurons were excited rather than nervous and they made me respond in the only way permitted" Of course, I want it". And it was so much that I and my friends could taste in all possible ways.

And now the recipe for pesto, simple, quick and tasty .

News for foreigners - Novità "forestiere"



Here is a new one. For today I will write the recipe, or better yet, I will try to write in English because I also have not-Italian readers, who have reproached me because I only write in Italian. Among them are friends who, I am sure, will correct my possible, maybe even probable number of errors.

To begin: start with the recipe for arugula pesto, but slowly I will try to translate the other.


I wish all a good read, accompanied by a little “patience”, I'm hoping not you won't make mistakes too.

C’è una novità. Da stasera le ricette le scriverò, o meglio tenterò di scriverle, anche in inglese visto che ho anche dei lettori non italiani, che mi hanno rimproverato perché scrivo solo nella mia lingua. Tra di loro ci sono anche degli amici che, sono certa, mi correggeranno nei miei possibili, molteplici errori.

Inizio con la ricetta del pesto di rucola, ma piano piano proverò a tradurre anche le altre.

Auguro a tutti una buona lettura, accompagnata da un po’ di pazienza, sperando di non sbagliare troppo.
